I've written in the past that I feel more connected with the food I eat when I am there to witness their demise or to see them in their most "raw" form. It may sound sick or morbid, but if you see a fish's life taken before your eyes, you may feel more grateful when you're having it for dinner that evening.
I was touring the Ben Thanh Market in Saigon when I saw a few fish in the middle of the market floor with the murder weapon not too far away.
About a week later in the Central Market in Phnom Penh, Cambodia, I discovered that the fish eat you!...or perhaps it just appears that way.
